A Gentle Grind of Hakka Lei Cha in Beipu
Today I am imagining a walk through Beipu Old Street using travel information and photographs taken in different years: first a red-brick house, then a pause at a grinding bowl, and finally Shuijing Alley. This is not a record of a visit or tasting I made today. What the photographs show, together with what the sources explain, is enough to give one bowl of lei cha a clear outline.

In the first source photograph, the brick walls, tiled roofs and low wall each carry their own lines. There is no need to call it a famous house: these ordinary details give the old street a life beyond busy stalls. Taiwan's Tourism Administration places Cietian Temple, the old street and Hakka lei cha in the same local setting. This photograph lets the imagined route move from architecture toward the tea table.
Lei cha is interesting before it becomes a drink, while its ingredients are still separate. A photograph taken in Beipu lays out a grinding bowl, wooden pestle, tea leaves, peanuts, sesame and other accompaniments. A Ministry of Agriculture account of Beipu lei cha also describes grinding tea leaves, peanuts and sesame before brewing. The photograph shows one preparation setup; it cannot establish every shop's proportions or the contents of every bowl.

The word lei describes a rhythmic action: pressing the ingredients with a wooden pestle and grinding them repeatedly against the bowl. Tea leaves become finer; peanuts and sesame break down until the ingredients begin to mingle. As a cooking inference, finer particles should disperse more evenly when hot water is added, while oils from the nuts and sesame can lend the drink a fuller feel. This explains the method; it is not a tasting note about the bowl in the photograph.
Brewing is the second part of the method. Loosen the ground mixture with a little hot water, then add more gradually; that makes it easier to judge the concentration than filling the bowl at once. Use less water for a thicker drink. Tea's possible astringency and the roasted aromas that peanuts and sesame may bring will vary with ingredients and proportions. These are expected flavor directions, not a claim that I tasted a particular shop's serving.
For a small home batch, start with tea leaves, cooked peanuts and cooked sesame, grind in stages, then add water gradually. If starting with raw nuts or sesame, roast them thoroughly and let them cool so moisture does not make the mixture clump. Small batches also make the grind easier to control. This is a home adaptation of the documented ingredients and method, not a Beipu shop's proprietary recipe. Sweetness or puffed rice can be adjusted to taste at the end.
Shuijing Alley | A wooden cover rests on the hexagonal well; the source photograph does not show water below (adapted from a 2014 photograph).
The imagined route ends at the hexagonal well in Shuijing Alley. Its wooden cover, nearby plants and old walls are visible in the source photograph. I cannot see water beneath the cover or know the alley's present condition from that image. It brings to mind the water added bit by bit to lei cha: seemingly a finishing step, yet it determines whether the bowl stays thick or flows lightly.
There is no need to hurry past the brick house or rush the grinding bowl. Breaking a cup of tea into ingredients, grinding and brewing suggests a small happiness: an ordinary thing receiving careful attention. The next time a bowl appears on the table, it may be worth noticing the patient gestures behind it.
