在旗津,讓一串炭烤小卷陪海風慢下來 / A Slow Cijin Walk with Grilled Squid
有時候,想去海邊不需要一張排得滿滿的行程表。這篇沿著高雄旅遊網的資料與三張不同時間、不同作者的照片,想像一條從旗津渡輪站、廟前路到旗後燈塔的散步路線。它不是我今天實際走訪或吃小卷的紀錄;圖中的暖色光線,也不是今日天氣。
Sometimes the thought of the sea needs no packed itinerary. Using Kaohsiung Tourism's information and three photographs made at different times by different people, this article imagines a walk from Cijin Ferry Station through Miaoqian Road to Cihou Lighthouse. It is not a record of my own visit or grilled squid today, and the warm light in these illustrations is not today's weather.
從渡輪想到一條慢慢走的路 / A slow route beginning with the ferry
高雄旅遊網把渡輪列為前往旗津的方式,也說渡輪站前的廟前路就是旗津老街。若從這裡開始紙上散步,我會先把路線想得簡單一點:海在一側,街屋與小吃在另一側。照片從燈塔方向俯看旗津,彩色的屋子、樹影與海岸都在同一個畫面裡,剛好提醒人不用急著選下一站。
Kaohsiung Tourism presents the ferry as a way to reach Cijin and places the old street on Miaoqian Road, in front of the ferry station. If I began this walk on paper, I would keep the route simple: the sea to one side, buildings and snacks to the other. A photograph taken from the lighthouse side looks over Cijin's colorful buildings, trees, and shore in one frame. It is a pleasant reminder that the next stop need not be chosen in a hurry.

廟前路的熱鬧,不必靠我杜撰一個攤位來證明。高雄旅遊網直接列出炭烤小卷、番薯椪和海產米粉等小吃。今天只取其中一道,讓炭火和小卷的關係慢慢成為路上的主角。
There is no need to invent a stall to establish Miaoqian Road's food scene. Kaohsiung Tourism lists charcoal-grilled small squid, fried sweet-potato cakes, and seafood rice noodles among its snacks. Here I follow just one of them, giving the relationship between heat and squid room to become the center of this imagined walk.
一串小卷,火候比醬更值得看 / Watching the heat behind grilled squid
料理示意圖的原照其實拍於臺北,不是旗津的店家或今日攤位。照片能讓我們看見整排竹籤、捲起的觸腕、表面的棕亮色與往上走的煙;它不能證明旗津某一家店的味道或醬料。光看這些可見的細節,就足夠把注意力放在「烤」這件事上。
The source photograph used to illustrate the dish was actually taken in Taipei, not at a Cijin shop or a stall open today. It shows a row of bamboo skewers, curled arms, a glossy brown surface, and smoke rising above the grill. It cannot tell us the taste or sauce of any particular Cijin vendor. Those visible details are enough to turn our attention to the act of grilling.

若想像剛離火的小卷,吸引人的應該是表面略帶焦香、切開仍有彈性與水分;這是料理手法可能帶來的口感,不是我的試吃心得。烤的重點是先讓烤架夠熱、表面不要濕答答,再以較高的火力短時間加熱,讓外層上色而不把肉烤得太韌。海鮮料理資料也提醒,魷魚適合快速烹調;農業部的食農資料則說小卷是鎖管的俗稱,常見烤食方式。這些是一般原理,不能反推照片裡攤商的時間、醬料或配方。
If I imagine squid just lifted from the grill, the appeal would be a little char at the surface while the flesh remains moist and springy. That describes a possible result of the method, not something I tasted. For a home version, heat the grill first and dry the surface, then cook over fairly high heat for a short time so the outside colors before the flesh turns tough. Seafood cooking guidance likewise favors quick cooking for squid, while Taiwan's Ministry of Agriculture notes that small squid is a form of squid commonly eaten grilled. These are general principles; they do not reveal the photographed vendor's timing, sauce, or recipe.
家裡若用平底鍋試做,我會先把處理好的小卷擦乾,鍋熱再下,少量分批煎烤,觀察表面轉色與肉身收縮就翻面確認熟度。醬料可以最後薄刷,避免糖分太早焦黑,讓海味仍有位置。不同大小與厚度所需時間不一樣,所以與其背固定分鐘數,不如盯著顏色、捲曲和是否熟透;這是家常建議,並不是旗津哪家店的做法。
At home with a pan, I would pat cleaned squid dry, heat the pan before adding it, and work in small batches. Watch for a color change and the flesh drawing in, then turn it and check that it is cooked through. A light brush of sauce near the end can keep sugar from scorching early while leaving room for the seafood flavor. Size and thickness change the cooking time, so color, curling, and doneness are more useful than a fixed number of minutes. This is a home tip, not a claim about any Cijin shop.
把最後一段路留給燈塔 / Saving the last stretch for the lighthouse
從廟前路再把目光移向旗後燈塔,散步的節奏可以安靜下來。原照裡,白色建築的正面與黑色燈室立在樹和天空之間;改作圖保留這個輪廓,卻把陰影畫得更柔和。它像一個適合停下來的句點,不需要替這張不同日子的照片編出同一天的海風。
Looking from Miaoqian Road toward Cihou Lighthouse, the pace of the imagined walk can soften. In the source photo, the white facade and dark lantern rise between trees and sky. The adaptation retains that outline while painting gentler shadows. It feels like a place to pause, without pretending that a photograph from another day captures the same sea breeze.

這三張圖拼不出一趟真的旅行,卻能給下一次散步一個溫柔的順序:先看海,途中留一點時間想想一串小卷的火候,再往燈塔走。小幸福或許只是有一段路可以慢慢走,也有一道料理值得慢慢理解。
These three images cannot document a single real trip, but they can suggest a gentle order for a future walk: see the sea, make a little room to think about the heat behind a squid skewer, and then head toward the lighthouse. A small happiness may be simply having a stretch of road to take slowly and a dish worth understanding at the same pace.
