A Slow Morning over Braised Pork Rice at Taichung Second Market
Some mornings need no long list of stops; it is enough to leave a little time for a bowl of rice. Drawing on Taichung Tourism's information and three photographs taken in different years, this article imagines a route from the entrance of Second Market to its hexagonal building and then to a bowl of braised pork rice. It is not a record of my own visit or tasting today, and the sunshine in the painted images does not represent today's weather.
Beginning at the market entrance
Second Market sits near the meeting of Sanmin Road and Taiwan Boulevard in Taichung's Central District. According to the city's tourism office, it is more than a century old and was once called Shintomichō Market during the Japanese colonial period. The 2012 source photograph frames the entrance between two buildings, with arcades, scooters, and stalls in view. The adaptation warms the light, while the arched entrance remains the guide into the scene.

On this walk imagined on paper, I would not rush toward a particular stall. Taichung Tourism lists braised pork rice, black tea, radish cake, and scallion pancakes among the market's foods; people also come here for everyday shopping. Letting breakfast eaters and shoppers keep their own pace gives the route a gentle beginning. Sometimes a small happiness is not ordering one more dish, but allowing an ordinary scene a moment of attention.
Looking closely at a bowl of rice
The source photograph identifies the dish as Lee Hai braised pork rice at Second Market and dates from 2005. In it, glossy brown pieces of pork sit over white rice, beside dark braised pork skin and pale green pickles. Those are visible details; a photograph cannot establish today's menu, recipe, or the flavor of a current serving. The painted adaptation keeps the arrangement of rice, meat, and accompaniments so that the dish becomes the middle stop of this route.

For a general home version of braised pork rice, the appealing contrast is between the meat's aroma, the dark sauce, and the rice: warm grains stay distinct, the sauce coats them, and the pork becomes tender without losing all texture. Taiwan's Ministry of Agriculture describes pork belly as being browned first and then gently simmered with soy sauce. That principle helps explain how browning builds aroma while slow simmering softens the lean and fatty layers. This is an explanation of a cooking method, not Lee Hai's published recipe or my own tasting note.
For a home attempt, I would cut pork belly into similarly sized pieces, brown them in small batches, then add soy sauce and enough liquid to simmer gently. Keep an eye on the pot bottom and the liquid level. Once the meat is tender, adjust the saltiness and sweetness, leaving enough sauce to moisten the rice. Thickness, cookware, and stove heat all change the timing, so tenderness is more useful than a rigid number of minutes; make sure the pork is fully cooked before serving. This is a home tip, not a claim about a market vendor's technique.
Pausing by the hexagonal building
Taichung Tourism explains that the market is organized around a central hexagonal structure, with trading areas arranged by type of goods. In the 2011 source photograph of the hexagonal building, red brick, a gray facade, a staircase, and the building name each have their place; the painted version keeps those outlines. Here the bowl of rice gains a setting of its own: a familiar dish within an old market that still serves shoppers and eaters.

Three photographs from different years cannot document one real day's journey. They can, however, suggest an order for a future Taichung walk: notice the market entrance, think about browning and slow simmering over a bowl of rice, and pause by the hexagonal building. Making room in a busy day to understand a simple meal may be the small happiness worth keeping.
