An Afternoon in Changhua: A Gentle Ba-Wan and Timeless Fan-Shaped Tracks

Yesterday's quiet wanderings followed the winding red-brick lanes of Lukang in search of morning steam; today, carried by the mild breeze along the old railway lines, our steps bring us into the heart of Changhua City. If one flavor captures the steady, unhurried pulse of this historic Taiwanese town, it is neither a banquet nor a rushed snack, but a crystal ba-wan dumpling resting patiently in low-heat oil, paired with an afternoon stroll to the fan-shaped locomotive roundhouse just a few blocks away.

The Patient Rhythm of the Warm Oil Bath

Standing beside the stove of an old corner shop, what strikes the ear first is not the violent sputtering of deep frying, but a gentle, rhythmic hum. The apron-clad cook watches the wide brass pan attentively, a pair of long bamboo chopsticks in one hand and a perforated skimmer in the other. The true soul of Changhua ba-wan lies in this patient warm-oil immersion: the wrappers—crafted from sweet potato starch and rice paste—are first steamed until set, then gently warmed in low-temperature oil until their milky tint yields to a glistening, translucent chew, absorbing aroma without turning heavy or greasy.

As the ladle gently lifts the ba-wan and rests it against the rim to drain, the cook picks up a pair of rounded kitchen shears and snips a quick cross through the surface. That wet, crisp sound of cutting is like a key unlocking anticipation. A sudden plume of fragrant steam escapes the opening, carrying the savory aroma of five-spice marinated pork shoulder and the fresh sweetness of crisp diced bamboo shoots.

Sweet Rice Sauce and Garlic Savory Glaze

Served in a rustic ceramic bowl, the ba-wan is cradled by two distinct sauces: a smooth, ivory-white sweet gravy brewed slowly from rice paste, and a deep-amber artisanal soy paste infused with fresh crushed garlic. Lifting a tender morsel of the translucent skin reveals a harmonious balance: first the soft, resilient spring of the dough, followed by the savory richness of hearty pork chunks, and finished with the crisp, clean crunch of bamboo. A sprig of fresh cilantro ties the comforting flavors together.

A bowl of ba-wan reflects the quiet philosophy of this old town: no need for pretentious novelty, but rather a faithful dedication to elemental steps—mixing the batter, seasoning the filling, steaming, simmering, and slow-cooking the sauces—repeated with care across decades until everyday sustenance becomes an art that warms the traveler from within.

Twelve Tracks Under the Open Sky

Finishing the meal, an unhurried ten-minute walk leads north along the trackside lane to the historic Changhua Fan-Shaped Train Roundhouse, the last surviving depot of its kind in Taiwan. Stepping past the gate, the space opens dramatically: built in 1922, the curved brick depot surrounds a central steel turntable, from which twelve radial railway tracks spread out gracefully like an unfolded paper fan. Autumn sunlight filters through the high timber trusses and ventilation skylights, casting quiet geometric shadows across black wooden ties and gleaming rails.

Inside the arched brick bays rest vintage locomotives—classic orange diesels and gleaming black steam engines—each tucked beneath towering ventilation flues set against the clear azure sky. A soft breeze stirs the branches of nearby bauhinia trees, carrying the nostalgic fragrance of engine oil and warmed steel. Looking down over the turntable from the observation deck, time itself seems to slow down, as if every timber beam and iron rivet retains the echoes of a century of railway journeys.

A Quiet Pause in the Journey

From the red-brick lanes of Lukang to the radiating rails of Changhua, central Taiwan offers a gentle, grounding constancy. It asks for no rushed itineraries or hurried checklists; it simply welcomes you with a warm, chewy ba-wan to comfort your hunger, and a quiet locomotive sanctuary to hold the golden light of the afternoon. Perhaps the true essence of wandering is simply allowing our own heartbeat to synchronize once more with the patient, timeless breath of an old town.
